Scoop School: Preflavoring Ice Cream Mix

It may be hard to know if pre flavoring your mix before running it through your used ice cream machine is a good idea. Will it make the product taste better? Will it be just as consistent? There's a couple things to consider when learning how to flavor ice cream.
First, its important to note the kind of vanilla you’re using. This will greatly affect the consistency of your product depending on what type of vanilla you're using for pre- flavoring. For vanilla extracts, they take a while to mature with the ice cream so it may be in your best interest to add vanilla extract to the bottles/bags of base you know you’ll use first. When doing this its important to adopt some sort of labeling system. The last thing you want is to mistakenly add extra vanilla to an already pre-flavored bag. This will result in an inconsistent product and product loss.
If you’re not using extract and you're using an artificial sweetener, it'll probably be in your best interest to skip on pre- flavoring and labeling these bags. Therefore, your staff will know they do not need to add more vanilla to the bags with a label, but the ones without will still need pre- flavor before going into the batch freezers. This ensures effective communication about products even if the manager is not on duty.
