Ice cream agers work by stirring the mix for 4+ hours or overnight at 40°F. Aging the mix cools it down before freezing, which allows the milk fat to partially crystallize and give the protein stabilizers time to hydrate. This improves the whipping properties of the mix, resulting in finished ice cream that is firmer and creamier.

Note: This ager is in good condition both inside and out. It refrigerates properly and the motor operates properly. Our in-house technicians have inspected both exterior and interior components and all necessary repairs have been done to the machine.

Crating Fee: To ensure your machine arrives in the same condition it leaves a mandatory $225 Crating Fee is required.
