Spotlight: Mami’s Gelato

We interviewed Phanor Komoda, the marketing rep for Mami’s Gelato. We discussed in detail their upcoming product Oatragous as well as their popular classics Froconut and Almondice. Komoda got his start in the frozen dessert industry while working at a restaurant with the daughter of Naomi Posner-Horie, the founder of Mami’s Gelato. They were looking for a salesperson, and with Komoda’s sales background, as well as becoming a vegan, it seemed like a perfect fit! 

“The perks of vegan gelato is your body is going to receive it well. I’m lactose sensitive so I can digest it a lot better. The consistency of Mami’s Gelato is great for the taste palette. The flavors are full-bodied, they don’t shy away from the flavor, they are bold and rich,” says Komoda. With being such a great canvas for many flavorings, adding alcohol to a Mami’s base is not out of the realm of possibilities. “People are doing it, we have clients that buy two to three cases a month to mix with alcohol. It is definitely being done,” says Komoda. 

When asked to expand more on the launch of Oatrageous, “Naomi has been working and perfecting the recipe for Oatrageous since the launch of Almondice. She did not waste any time. After doing market research, we found that in the past two years oat milk-based products has been increasing by the billions,” says Komoda. “A lot of customers have been asking for the product. We’re excited about the launch and so are our customers.” 

As they should be! The standard time to create a quality Mami’s based gelato on your standard batch freezer takes about 8 to 12 minutes to make. “You also want to make sure your over run is between 20 to 30 percent,” says Komoda. 

When compared to Almondice and Froconut, Komoda says, “It’s more neutral, I don’t want to say flavorless because it is sweet, but it doesn’t have any undertones like Froconut and Almondice do. It has no flavor outside of being sweet.” This will certainly be the flavor for your venue if you’re looking to experiment with more flavors and be creative. Because of its neutrality, pairing it with any flavor should be a palette pleaser. “We’re anticipating pairing it with anything from Unicorn Poo or Cookies N’ Cream,” says Komoda. 

When asked what his personal favorite recipe is Komoda states, “The first time I tried Mami’s Gelato, it was the original Froconut in soft serve form and I had about three cones! My personal favorite flavor is Cookies N’ Cream. Whether I can try the Almondice, Froconut, or Oatragous versions of it, I know I’m gonna love it!”
