Taylor 794

Image of Taylor 794 soft serve machine

The Taylor 794 is a fan favorite for a reason—this high-volume, gravity-fed soft-serve ice cream machine is simple, reliable, and more straightforward to maintain than many newer models. Like a well-built classic car, everything is visible, accessible, and as easy to repair as a soft serve machine can be. No fancy programming here—adjustments are made with a turn of a flathead screwdriver, which is exactly what makes this machine so durable. If you prefer hands-on control and a machine that just works, the 794 is your trusty stead.

Features

  • Built for High-Volume Demand – With two 14-quart refrigerated hoppers, dual compressors, and two beater motors (1.5 hp each), the 794 is designed to handle heavy traffic while maintaining consistent product quality.
  • Gravity-fed Simplicity – No pumps, no extra hassle—gravity-fed operation means fewer moving parts, making it more reliable and easier to maintain.
  • Durable, No-Nonsense Controls – The Softech™ panel ensures consistency without complex programming—just simple, reliable adjustments built to last.
  • Multiple Flavor & Dessert Options – Serve two flavors and a twist of the two with soft serve, custard, yogurt, or sorbet to fit any menu.

    Commonly Asked Questions:

The Taylor 791 and 794 are Direct relatives —the 791 is the medium-volume workhorse, while the 794 is the high-volume powerhouse. The difference? The 791 runs on one motor, one compressor, and one dedicated outlet, while the 794 steps it up with two motors, two compressors, and two dedicated outlets to handle busier operations. But at their core, they share the same Softech™ control board, freezing cylinder sizes, and mix hopper capacities, so if you know one, you’ll feel right at home with the other.

What is viscosity, and how does it affect my Taylor 794?
Viscosity refers to how thick or thin your soft serve is, and on most Taylor soft serve models, it’s how the machine regulates freezing. Instead of a simple temperature probe, the beater motor periodically rotates to measure resistance (amps). If the product is too thick, the machine lowers the temperature; if it’s too thin, it cools it down further.

    When should I adjust viscosity?
If your soft serve is coming out too soft or too liquidy, you may need to adjust viscosity—especially when using a new mix since every product freezes at a slightly different temperature.

How do I adjust the Viscosity on the Taylor 794?

Image of Taylor Softech board. Pointing at the Viscosity setting

    1. Remove the metal plate covering the Softech™ board to access the controls.
    2. Locate the two Softech boards—the right-side board controls the right freezing cylinder, and the left-side board controls the left cylinder.
    3. Find the Mix Viscosity adjustment on the bottom left of the board.
    4. Using a flathead screwdriver, turn the adjustment:
      • Right (thicker/colder) – Increases viscosity and makes the product firmer.
      • Left (thinner/warmer) – Decreases viscosity, making the product softer.
    5. Adjust incrementally, then test the product after 10 minutes to let the change take effect.

⚠️ Warning: Turning the setting too far to the right can over-freeze the barrel and damage the motor. Always make small adjustments, give the machine time to make this adjustment, and test the product.

The Taylor 794 keeps things refreshingly simple, just like its classic, no-nonsense design. No confusing tech—just the essentials you actually need:

    • Power Switch – Turns the machine on and off (pretty self-explanatory, but hey, it’s important).
    • MIX LOW Indicator – This gives you a heads-up when it’s time to refill the mix, so you’re never caught off guard.
    • STANDBY Mode – Maintains safe temperatures during off-hours without freezing and agitating the freezing cylinder, so you don’t have to drain everything overnight (don’t forget to flip the feed tubes (air tubes)).
    • WASH Key – For cleaning, this mode spins the beaters to agitate and help dispense wash water or sanitizer. No freezing or refrigeration happens in this mode.
    • AUTO Key – The magic button—this is what keeps your soft serve flowing perfectly throughout the day.
    • Reset Button – If something trips, this is your “let’s try that again” button. There are two red buttons on the front bottom panel controlling each side.
    • Adjustable Draw Handle – The knob underneath the handle can be twisted to adjust the flow of soft serve when dispensing, so you get the perfect portion every time.
