Every frozen dessert machine removes heat during operation. That heat is dissipated using either air or water. Your setup must accommodate this process to ensure consistent output and prevent machine strain.

Tip: If you are using multiple air-cooled machines in the same room, additional air conditioning or heat venting may be required.

4. Adjusting Viscosity, the Right Way
Viscosity refers to the thickness and firmness of your product. Set it too cold, and you risk damaging your machine (gearbox, beaters, or barrel). Always begin with a warmer setting and make incremental adjustments as needed.
